Why it works: Lemon and pepper match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 27,047 recipes. Both carry trans-2-nonenal, which smells cardboard, fatty. The science ↓

Deviled Eggs

Ingredients

Directions

Boil the eggs

  1. Place the eggs in a saucepan and cover with hot water.

  2. Bring to a boil, then reduce heat and simmer for 45 minutes, keeping the water just below boiling.

  3. Drain the hot water and remove the shells from the eggs.

Make the filling

  1. Cut the eggs in half lengthwise and remove the yolks.

  2. Mash the yolks into a smooth paste with olive oil, then mix in lemon juice, mustard, chicken, salt, and cayenne.

  3. Form the mixture into balls the size of the original yolks and place them back into the egg white halves.

Serve

  1. Arrange three halves on individual nests of lettuce leaves and serve with mayonnaise or boiled salad dressing.

What each ingredient does

Eggs
Provide the white shells for the filling and the rich yolk that becomes the filling.
Olive oil
Adds moisture and richness, helping the mashed yolks form a smooth, spreadable paste.
Lemon juice
Adds acidity that brightens the rich yolk filling and balances its fat.
Mustard
Adds sharp flavor and aroma, and its emulsifiers help bind the yolk paste.

The step that matters

Keep the water just below boiling while simmering the eggs. A vigorous boil can crack the shells and toughen the whites. Gentle heat cooks the yolks evenly and helps prevent the green ring that forms when overcooked yolks react with iron in the white.

Swap the mustard

How well each one fits the dish's main ingredients (egg, chicken, lemon, pepper):

  1. Capsicumfits better
