Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Preheat the oven to 400°F (200°C).

  2. Line the bottom and sides of a well-buttered baking dish with hot, seasoned mashed potatoes.

  3. Add the chopped onion or chives to the potatoes.

  4. Layer the cut roast beef over the potatoes and season with salt, pepper, onion juice, and Worcestershire sauce.

  5. Moisten the beef with Brown Sauce and cover with another layer of mashed potatoes.

  6. Use a pastry bag with a star tube to decorate the rim of the dish with the potato mixture.

  7. Brush the top lightly with the beaten egg.

  8. Bake until heated through and the potato is delicately browned.
