Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Roast beef or steak
Provides the main body and savoury meat flavour of the croquettes.
Brown sauce
Binds the chopped meat so it holds its cone shape.
Egg
Binds the breadcrumb coating so it sticks and crisps around the filling.
Breadcrumbs
Forms a crisp, golden outer crust when fried.

The step that matters

Frying in deep hot oil until golden brown. If the oil is not hot enough, croquettes absorb oil and turn greasy before the coating browns. Too hot and the outside browns before the cold filling heats through.

Swap the parsley

How well each one fits the dish's main ingredients (beef, pepper, sauce, egg):

  1. Tarragonfits about as well
  2. Parsleythe original
  3. Nutmegfits less well
  4. Capersfits less well

Fit is the average pairing score against beef, pepper, sauce, egg. Candidates are from the same food group and used in at least 100 recipes.
