Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Wash and wipe the tomatoes, then remove a thin slice from the stem ends.

  2. Scoop out the seeds and pulp.

Fill and bake

  1. Mix the pulp with an equal amount of cracker crumbs, salt, pepper, onion juice, and sugar.

  2. Refill the tomatoes with the mixture and place them in a buttered baking dish.

  3. Sprinkle with buttered crumbs and bake at 400°F (200°C) for 25 minutes.

What each ingredient does

Tomatoes
Provide the juicy vessel and body of the dish, softening as they bake.
Cracker crumbs
Absorb tomato juice and bind the pulp into a spoonable, set filling.
Sugar
Adds sweetness that balances the acidity of the tomatoes.
Buttered crumbs
Add a golden, crisp topping as the surface browns in the oven.

The step that matters

Filling the tomatoes with the pulp mixture. Tomato pulp is watery, and cracker crumbs must be mixed in evenly so the filling holds its shape rather than leaking or turning soggy during baking.

Swap the onion

How well each one fits the dish's main ingredients (tomato, pepper, sugar, butter):
