Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Make the batter

  1. Cream the butter in a large bowl.

  2. Gradually add the sugar while beating constantly.

  3. Mix and sift the flour, baking powder, cream of tartar, and salt.

  4. Add the dry mixture alternately with the milk to the butter mixture.

  5. Stir in the almond extract.

  6. Gently fold in the beaten egg whites, mixing well.

Bake

  1. Pour the batter into two buttered granite bread pans, filling each two-thirds full.

  2. Bake in a moderate oven at 350°F (175°C) for 45 minutes.

What each ingredient does

Butter
Creams with the sugar to trap air and give the cake a tender, rich texture.
Pastry flour
Provides the structure that holds the cake together as it bakes.
Egg whites
Beaten stiff, they trap air that lifts and lightens the batter.
Baking powder
Releases gas during baking, helping the cake rise.
Sugar
Sweetens the cake and helps create a fine, even crumb when creamed.
Milk
Adds moisture and hydrates the flour to form the batter.

The step that matters

Folding in the egg whites. Beaten egg whites hold trapped air, which lifts the cake. Stirring them vigorously knocks out that air, so fold gently until just combined to keep the cake light.
