Angel Cake

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

  1. Add salt to the egg whites and beat until stiff and dry.

  2. Sift in the cream of tartar and gradually add sugar while beating constantly.

  3. Add vanilla extract, then cut and fold in the sifted flour.

  4. Bake in an angle cake pan that has been wet with cold water at 350°F (175°C) for one hour.

  5. Sift flour and sugar five times before measuring.
