What each ingredient does

Beef
Collagen-rich cuts become tender and flavorful during slow cooking, giving the stew its body.
Flour
Coating the cubes thickens the cooking liquid and helps the meat brown.
Onion
Browns with the meat to add savory sweetness and aroma to the stew.
Potatoes
Starch softens during cooking and thickens the stew while holding their shape.
Carrots
Hold their shape during simmering and add natural sweetness.

The step that matters

Cook slowly until the meat is tender. Tough cuts like neck and shoulder are rich in collagen, which breaks down into gelatin only with long, gentle simmering. Boiling hard toughens the muscle fibers and leaves the meat chewy.

Swap the onion

How well each one fits the dish's main ingredients (beef, flour, carrot, turnip, potato, pepper, pork):

  1. Parsnipfits better
  2. Leekfits better
  3. Spinachfits about as well
