Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Salmon
Provides the main protein and flaky texture of the dish.
Butter
Adds richness and flavour, and forms the base of the roux.
Flour
Thickens the milk into a smooth sauce when cooked with butter.
Milk
Forms the body of the white sauce, giving it creaminess.

The step that matters

Stirring the milk into the roux. Adding milk gradually while stirring keeps the flour from clumping, so the sauce thickens smoothly instead of becoming lumpy.

Swap the parsley

How well each one fits the dish's main ingredients (salmon, pepper, butter, flour, milk, lemon):

  1. Parsleythe original
  2. Cardamomfits about as well
  3. Dillfits about as well
  4. Nutmegfits less well

Fit is the average pairing score against salmon, pepper, butter, flour, milk, lemon. Candidates are from the same food group and used in at least 100 recipes.
