Escalloped Oysters

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

  1. Moisten stale bread crumbs with melted butter and season with coarse sea salt and black pepper.

  2. Butter a baking dish and add a layer of bread crumbs to the bottom.

  3. Place a layer of oysters on top, followed by another layer of bread crumbs and another layer of oysters.

  4. Cover the entire dish with the remaining bread crumbs.

  5. Bake in a moderate oven at 350°F (175°C) for about 20 minutes, or until the crumbs are nicely browned.
