Why it works: Pepper and lemon match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 27,047 recipes. Both carry trans-2-nonenal, which smells cardboard, fatty. The science ↓
Braised Beef or Pot Roast
Ingredients
Directions
The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.
Prepare
Trim the roast and rub it with coarse sea salt and black pepper.
In a skillet, brown the diced onion in salt pork fat.
Braise
Place the roast in a braising pan and pour the boiling water over it.
Add the browned onion, cover tightly, and cook in a 350°F (175°C) oven for about 4 hours.
Turn the roast after 2 hours and add more water as it evaporates to maintain 3 cups of gravy.
Once tender, remove the meat and skim off the fat from the gravy.
Finish the gravy
Thicken the gravy with 1 tablespoon of flour mixed with a little cold water, then strain it into the gravy.
Season the gravy with black pepper, coarse sea salt, and a little lemon juice.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Chuck roast
- Long braising breaks down connective tissue, making the meat tender and moist.
- Onion
- Browning the diced onion adds savory, sweet depth to the gravy.
- Flour
- Starch thickens the cooking liquid into a smooth, body-rich gravy.
- Lemon juice
- A little acidity brightens the rich, fatty gravy.
The step that matters
Keep the roast covered and add water as it evaporates. Tight covering and steady added liquid keep the braise moist and gently cooked. Without enough liquid the meat can dry out and the gravy can scorch before the connective tissue has softened.
Swap the lemon

- Limefits better
- Mangofits about as well
- Lemonthe original
Fit is the average pairing score against pepper, onion, pork, flour. Candidates are from the same food group and used in at least 100 recipes.
