Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the veal

  1. Rub the veal with sugar, salt, and pepper, using half as much sugar as salt.

  2. Place the veal on a rack in a roasting pan.

Roast and baste

  1. Cook in a hot oven at 400°F (200°C) until nicely browned.

  2. Make a thin gravy by melting butter, adding flour, and whisking in stock or water.

  3. Season the gravy with pepper and salt.

  4. Baste the veal with the gravy every fifteen minutes.

  5. Cook for two and a half hours.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal
Is the meat being roasted, providing the main body and flavour of the dish.
Sugar
Adds sweetness and helps the surface brown during roasting.
Butter
Adds fat and richness to the gravy.
Flour
Thickens the melted butter and stock into a gravy.

The step that matters

Basting the veal with gravy every fifteen minutes. Regular basting keeps the surface moist and helps it brown evenly. Opening the oven often lets heat escape, so basting should be done quickly.
