Why it works: Butter and pepper are a kitchen classic. They rank in the top 21% of all ingredient pairs, and cooks put them together in 85,593 recipes. Both carry trans-2-nonenal, which smells cardboard, fatty. The science ↓
Summer Squash
Ingredients
Directions
Prepare the squash
Pare the squash, cutting away only the outer rind.
Cut the squash into quarters if small, or into small pieces if large. If the seeds are young and small, do not remove them.
Steam and mash
Place the squash in a steamer over boiling water and steam until tender, about 30 to 40 minutes.
Remove from the steamer and drain any excess water.
Mash the squash in a stewpan.
Season and serve
Add butter, salt, and pepper to taste.
Set the stewpan uncovered on the back of the stove for about 15 minutes to dry, stirring occasionally. Reheat and serve.

What each ingredient does
- Summer squash
- Provides the main body and mild flavour of the dish once tender and mashed.
- Butter
- Adds fat for richness and a smoother, silkier mouthfeel.
The step that matters
Drying the mashed squash on the stove. Squash holds a lot of water, and draining alone may leave the mash wet. Cooking it uncovered and stirring lets surplus moisture evaporate, so the texture stays thick rather than watery.
