Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. In a bowl, combine the beef, pork, onion, nutmeg, lemon juice, bread crumbs, salt, pepper, and melted butter, then mix all ingredients well and pack the mixture into a baking dish.

Bake and serve

  1. Bake for two hours, covering it for part of the time.

  2. Serve with gravy made from the drippings, tomato sauce, or horseradish sauce. This loaf is also good served cold.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beef
Provides the main body and rich meaty flavor of the loaf.
Pork
Adds fat, which keeps the loaf moist and tender as it bakes.
Bread crumbs
Absorb juices and fat, helping the loaf hold together and stay moist.
Onion
Adds moisture and savory sweetness as it softens during baking.
Butter
Adds richness and fat, contributing to a moist texture and flavor.

The step that matters

Covering the loaf for part of the two-hour bake. Covering traps steam so the loaf cooks through gently and stays moist, while uncovering later lets the surface brown. Removing the cover too early can dry out the outside.
