What each ingredient does

Lamb
Becomes tender through long simmering, giving the stew its main meat and body.
Potatoes
Hold their shape when parboiled and add starch that thickens the stew slightly.
Rice
Absorbs liquid and releases starch, helping thicken the broth.
Onion
Browned first in fat to build a sweeter, deeper savory base.
Tomato or tomato ketchup
Adds acidity and a tangy flavor that brightens the rich lamb.

The step that matters

Simmering the lamb until tender. Lamb shoulder-type cuts contain connective tissue that only breaks down into gelatin with long, gentle simmering. Boiling hard or stopping early leaves the meat tough, so keep the liquid at a gentle simmer for the full time.

Swap the onion

How well each one fits the dish's main ingredients (lamb, potato, rice, tomato, pepper):

  1. Capsicumfits better
  2. Okrafits better
  3. Asparagusfits better

Fit is the average pairing score against lamb, potato, rice, tomato, pepper. Candidates are from the same food group and used in at least 100 recipes.
