Why it works: Lemon and pepper match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 27,047 recipes. Both carry trans-2-nonenal, which smells cardboard, fatty. The science ↓

Scalloped Oysters

Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Drain and wash the oysters, then dry them in a folded cloth.

  2. Mix the bread crumbs, salt, pepper, and lemon juice together, then add the melted butter and mix well.

Assemble and bake

  1. Butter a baking dish and cover the bottom with one-third of the bread crumb mixture.

  2. Add half of the oysters, then one-third of the bread crumbs, followed by the remaining oysters.

  3. Top with the rest of the bread crumbs.

  4. Pour the warm cream over the top and bake in a 400°F (200°C) oven for 20 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Oysters
Form the main body of the dish and provide its briny, savory flavor.
Bread crumbs
Absorb the butter and cream and form a crisp, golden topping and layers.
Butter
Coats the crumbs, adding richness and helping them brown in the oven.
Cream or milk
Moistens the crumbs and oysters so the dish bakes creamy rather than dry.
Lemon juice
Adds acidity that brightens the rich butter and cream and balances the oysters.

The step that matters

Pour the warm cream over the top. Warm liquid soaks evenly into the crumb layers and starts the custard-like moisture before baking. Cold cream would slow this and can leave dry pockets or uneven cooking.

Swap the lemon

How well each one fits the dish's main ingredients (oyster, butter, bread, cream, pepper):

  1. Lemonthe original
  2. Figfits about as well
  3. Plumfits about as well
  4. Strawberryfits less well

Fit is the average pairing score against oyster, butter, bread, cream, pepper. Candidates are from the same food group and used in at least 100 recipes.
