Why it works: Flour and butter are a kitchen classic. They rank in the top 12% of all ingredient pairs, and cooks put them together in 124,287 recipes. Both carry isobutyraldehyde, which smells malty, green. The science ↓

Ingredients
Directions
The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.
Prepare the butter
Wash and squeeze the butter in cold water.
Dry the butter well in a floured cloth.
Shape the butter into a square about the size of a slice of sandwich bread. Keep the butter cool.
Make the dough
Sift the flour onto a marble slab or board.
Make a well in the center of the flour.
Add lemon juice to the well.
Gradually mix in cold water until a smooth paste forms.
Knead the paste until smooth.
Roll the paste out into a strip slightly wider than the butter and more than twice its length.
Place the butter on one half of the paste.
Fold the other half of the paste over to enclose the butter.
Press the edges together with a rolling pin.
Laminate and bake
Let the dough rest in a cool place for about 15 minutes.
Roll the dough out to about three times the original length while keeping the width the same.
Fold the dough in thirds.
Turn the dough so the folded edges are on the right and left.
Roll and fold again.
Set aside for another 15 minutes.
Repeat this process until the dough has been rolled out six times. Ensure even rolling and maintain a long, narrow shape. Sprinkle with flour as needed. Brush off any excess flour before rolling.
After the sixth roll, bake the dough in a hot oven at 400°F (200°C) until risen and partially baked.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.

Flour and butter barely smell alike, yet cooks put them together in 124,287 recipes: they work on texture and structure more than aroma.
Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Flour
- Forms the gluten structure that holds the thin layers of dough together.
- Butter
- Stays solid between dough layers and melts in the oven, creating steam that lifts and separates the layers.
- Cold water
- Hydrates the flour to form a dough that stays cool and workable.
- Lemon juice
- Adds acidity that helps tenderize the gluten in the dough.
The step that matters
Keeping the butter and dough cool during rolling. If the butter softens and blends into the dough, the layers merge and the pastry will not rise into separate flaky leaves. Resting the dough between rolls keeps the butter firm enough to stay in sheets.
