Lining of Moulds with Lady-fingers for Charlotte Moulds
Ingredients
Directions
Fit a strip of oiled paraffin paper into the mold lengthwise, letting the ends hang over the top.
Fit a strip into the mold crosswise, letting the ends hang out as before.
Trim the lady-fingers to the length needed to reach the top of the mold.
Place the lady-fingers in the mold on the paper with the upper side facing the paper.
Let the edges of the fingers just meet or leave a uniform space between them.
Put a spoonful of the charlotte mixture at the base of each finger to hold it in place.
Straighten the fingers and fill the mold carefully.
