Baked Rhubarb

Ingredients

Directions

The book gives no oven temperature. The 350°F in the steps was added when the recipe was transcribed, as a starting point.

  1. Rinse the rhubarb quickly and wipe it clean. Remove the skin or shreds from larger stalks.

  2. Place the rhubarb in an earthen or agate dish.

  3. Sprinkle sugar over the rhubarb to taste.

  4. Cover the dish with a plate that fits on top.

  5. Bake in a moderate oven (350°F / 175°C) until tender.

  6. Serve warm.
