Canned Strawberries
Ingredients
Directions
Weigh the hulled strawberries. Use ¼ of their weight in sugar.
Wash the strawberries in a colander under cold running water.
Crush ¼ of the strawberries using a potato ricer or pestle and strain through doubled cheesecloth to extract juice.
Measure the juice, add ½ the amount of water and the sugar, then boil for 20 minutes, skimming as needed.
Place the remaining strawberries in fruit cans and pour the prepared syrup over them.
Seal the cans with rubber bands and loosely place the covers on.
Fill a saucepan with warm water, placing the cans on a perforated board or heavy paper, and ensure the water is more than half full. Cover the saucepan.
