Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. In a bowl, mix bread crumbs, onions, celery, salt, pepper, thyme, and melted butter.

Stuff and roast

  1. Stuff the turkey with the mixture and sew it closed.

  2. Place the turkey in a roasting pan and pour chicken broth over it.

  3. Roast for about 2 to 2.5 hours, basting occasionally, until the internal temperature reaches 165°F (74°C).

  4. Let it rest for 15 minutes before carving.

What each ingredient does

Turkey
Forms the main body of the dish, cooking through to a safe internal temperature.
Bread crumbs
Absorb butter and juices to keep the stuffing moist and give it body.
Melted butter
Adds fat and richness, helping the stuffing and turkey skin brown and taste savory.
Chicken broth
Adds moisture to the roasting pan, keeping the turkey juicy and flavoring the drippings.
Onions
Add savory aroma and sweetness as they soften in the stuffing.

The step that matters

Checking the internal temperature. The thickest parts of a stuffed bird can stay undercooked while the outside looks done. Stuffing also slows heat reaching the center, so checking the internal temperature at the thickest point and in the stuffing is essential for safety.

Swap the onion

How well each one fits the dish's main ingredients (turkey, bread, celery, pepper, thyme, butter, chicken):

  1. Tomatofits better
  2. Carrotfits better
  3. Capsicumfits better

Fit is the average pairing score against turkey, bread, celery, pepper, thyme, butter, chicken. Candidates are from the same food group and used in at least 100 recipes.
