Why it works: Carrot and parsnip match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 1,097 recipes. Both carry 2-isobutyl-3-methoxypyrazine, which smells green bell pepper, earthy. The science ↓

Amber Soup, or Clear Broth

Ingredients

Directions

Make the stock

  1. Combine soup bone, chicken, ham, and cold water in a large pot.

  2. Bring to a boil and simmer for 5 hours.

  3. Fry the onion in a little hot fat.

  4. Insert the cloves into the onion.

  5. Add the onion and vegetables to the pot and cook for the last hour.

  6. Strain the soup into an earthen bowl.

  7. Let it sit overnight.

Clarify the soup

  1. Remove the fat from the top.

  2. Take out the jelly, avoiding the sediment.

  3. Mix the jelly with the beaten egg whites and shells.

  4. Boil quickly for 30 seconds.

  5. Place the kettle on the hearth.

  6. Skim off the scum and egg whites without stirring the soup.

  7. Pass the soup through a jelly bag until clear.

Finish and serve

  1. Reheat before serving and add the caramel for color and flavor.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Soup bone
Releases gelatin and body into the broth during long simmering.
Chicken
Adds meaty flavor and gelatin that gives the finished soup body.
Eggs
Egg whites and shells bind impurities so they can be skimmed off, clearing the broth.
Caramel
Adds deep amber color and a mild toasted sweetness to the soup.

The step that matters

Skim off the scum and egg whites without stirring the soup. Stirring breaks the clearing raft of coagulated egg white and sediment back into the liquid, leaving the soup cloudy instead of clear.

Swap the clove

How well each one fits the dish's main ingredients (chicken, ham, onion, parsley, carrot, parsnip, celery):

  1. Thymefits better
  2. Marjoramfits better
  3. Tarragonfits better
  4. Clovethe original

Fit is the average pairing score against chicken, ham, onion, parsley, carrot, parsnip, celery. Candidates are from the same food group and used in at least 100 recipes.
