Corned Beef

Why it works: Cabbage and pepper are a kitchen classic. They rank in the top 5% of all ingredient pairs, and cooks put them together in 4,081 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

Corned Beef

Ingredients

Directions

Cook the beef

  1. Place the corned beef in a pot and cover it with cold water.

  2. Bring the water to a boil, then reduce the heat to maintain a gentle boil.

  3. Boil the beef for 4-5 hours, skimming often, until thoroughly cooked.

Add the vegetables and serve

  1. If using carrots, add them to the pot 45 minutes before serving.

  2. If using cabbage, add it along with red peppers at the same time.

  3. Before serving, press out excess water from the cabbage and mix in small pieces of butter.

  4. Serve the beef in the center of the cabbage, garnished with pickles.

What each ingredient does

Corned beef
Is the main protein, becoming tender as it simmers slowly for hours.
Butter
Adds richness and a silky mouthfeel to the cabbage.

The step that matters

Maintaining a gentle boil for 4-5 hours. A rolling boil toughens meat and can break it apart, while a gentle simmer lets connective tissue slowly break down into tender, moist meat. Skimming removes foam that would otherwise cloud the cooking liquid.

Swap the carrot

The recipe marks carrot as optional. How well each one fits the dish's main ingredients (beef, cabbage, pepper, butter):

  1. Potatofits about as well
  2. Onionfits about as well
  3. Leekfits about as well
  4. Carrotthe original

Fit is the average pairing score against beef, cabbage, pepper, butter. Candidates are from the same food group and used in at least 100 recipes.
