Ranaque Chickens

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the chicken

  1. Using a sharp knife, slit the chicken down the back.

  2. Scrape the sides to remove the bones, breaking them at the joints.

Stuff and tie

  1. Chop the cold cooked lamb and mix with pepper, salt, summer savory, chopped pork, and lemon juice.

  2. Stuff the chicken with the mixture and sew it closed, shaping it well.

  3. Tuck the ends of the wings under the back and tie them firmly, along with the legs, to create a plump surface.

  4. Lard the chicken with two or three rows of pork pieces on top.

Bake and serve

  1. Bake the chicken at 350°F (175°C) until thoroughly cooked, basting often with butter.

  2. Serve with tomato sauce poured around it in the dish.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chicken
Forms the main body of the dish, cooked whole after being boned and stuffed.
Cold cooked lamb
Provides the bulk and savory flavor of the stuffing.
Chopped pork
Adds fat and richness to the stuffing and to the larded surface.
Butter
Adds fat and browning to the skin during basting.
Lemon juice
Adds acidity that brightens the rich lamb and pork stuffing.

The step that matters

Tie the chicken firmly. Tying the wings and legs holds the shape so the stuffing stays inside and the bird cooks evenly, giving a plump surface rather than a collapsed one.

Swap the lemon

How well each one fits the dish's main ingredients (chicken, lamb, pepper, summer savory, pork, butter, tomato):

  1. Lemonthe original
