Puff Paste

Ingredients

Directions

  1. Sift and weigh the flour, placing it on a clean surface.

  2. Sprinkle the salt and sugar over the flour.

  3. Beat the egg yolks and mix in a few spoonfuls of ice-cold water.

  4. Pour the egg mixture into the center of the flour while mixing with your fingers.

  5. Knead until you have a smooth and firm paste.

  6. Roll the paste into a rectangle, ensuring straight edges.

  7. Work the butter until supple but not too soft.

  8. Divide the butter into three equal parts.

  9. Spread one part of the butter over half of the paste, fold the other half over it, and fold again from right to left.

  10. Roll out the paste into a rectangle again, repeating the butter spreading and folding process with the second and third portions of butter.
