Tapioca Cream

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the tapioca

  1. Soak the tapioca in 1 cup of milk overnight.

  2. The next day, stir in the beaten egg yolks and sugar.

Cook the pudding

  1. In a pot, bring 3 cups of milk to a boil, then stir in the tapioca mixture.

  2. Cook until thickened, then remove from heat and fold in the beaten egg whites.

  3. Flavor to taste and reserve some egg whites for decoration.

Decorate and bake

  1. Mix reserved egg whites with a little sugar, place in a paper funnel, and decorate the top of the pudding.

  2. Bake in a preheated oven at 400°F (200°C) for a few minutes to color.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tapioca
Thickens the milk as it cooks, giving the pudding its body and soft, chewy texture.
Milk
Forms the liquid base that the tapioca swells in and thickens into a creamy custard.
Egg yolks
Enrich the custard and help it set smoothly and richly as it thickens.
Sugar
Sweetens the pudding and contributes to its tender texture and browning on top.
Egg whites
Folded in at the end to add a light, airy lift to the pudding.

The step that matters

Cook until thickened. Tapioca must cook long enough for its starch to swell fully and thicken the milk; if it is undercooked the pudding stays thin and grainy. Folding in the egg whites after removing it from heat keeps them light rather than scrambled.

“What each ingredient does” and “The step that matters” were written by Claude from this recipe’s own method and reviewed in samples by CompKitchen.
