Why it works: Rice and cinnamon match in chemistry and in kitchens. They rank in the top 4% of all ingredient pairs, and cooks put them together in 2,137 recipes. Both carry guaiacol, which smells smoky, sweet. The science ↓
Rice-cones
Ingredients
Directions
Mold hot boiled rice in cups dipped in cold water.
Once cold, turn the rice out onto a flat dish, arranging uniformly.
Scoop out a little rice from the top of each cone with a teaspoon.
Fill the scooped-out space with jelly.
Just before serving, pour hot brandy-sauce into the bottom of the dish.
For added flavor, boil a stick of cinnamon in the rice while cooking.

Swap the cinnamon
The recipe marks cinnamon as optional. How well each one fits the dish's main ingredients (rice, brandy, sauce):
- Cinnamonthe original
- Nutmegfits about as well
- Capersfits less well
- Gingerfits less well
Fit is the average pairing score against rice, brandy, sauce. Candidates are from the same food group and used in at least 100 recipes.
