What each ingredient does

Strawberries
Provide the fruit that forms the body and flavor of the preserve.
Powdered sugar
Sweetens the fruit and helps preserve it by drawing out moisture and inhibiting spoilage.

The step that matters

Boil the mixture for exactly 20 minutes. Boiling concentrates the sugar and fruit, thickening the preserve and driving off water so it keeps well. Undercooking leaves it runny and more prone to spoiling, while overcooking can darken and toughen the fruit.
