Polenta a LA Napolitaine

Ingredients

Directions

  1. Melt 6 ounces of butter in a frying pan over medium heat.

  2. Prepare polenta as previously instructed; when nearly cooked, add 2 ounces of fresh butter and stir well.

  3. In a well-buttered sauté pan, cook 6 slices of fat bacon.

  4. Add 12 cleaned small birds and 2 bay leaves to the pan.

  5. Fry the birds until nicely colored, then moisten with ½ pint of broth and ⅓ cup of white wine.

  6. Season with salt and pepper, cover, and simmer gently until the birds are cooked, basting and turning as needed.

  7. Once the polenta is done, spread it on a dish and top with grated parmesan cheese.

  8. Place the cooked birds on top, strain the gravy over, and serve.
