Eggs Brouillés with Asparagus Points

Ingredients

Directions

Make the scrambled eggs

  1. Break and beat the eggs in a stewpan.

  2. Add grated cheese, butter, cream or milk, salt, and pepper.

  3. Set the stewpan on moderate heat, stirring constantly with a wooden spoon, and occasionally shake the stewpan to prevent sticking.

  4. When the eggs begin to thicken, move the stewpan off the heat.

  5. Add the cooked asparagus points and mix until the eggs are set but not hard.

Serve

  1. Pour into a hot dish and decorate with triangle-shaped croutons fried in butter.

What each ingredient does

Eggs
Set into a soft, tender structure that forms the body of the dish.
Butter
Adds richness and a smooth, silky texture to the eggs.
Cream or milk
Adds moisture, keeping the eggs soft and creamy rather than dry.
Grated cheese
Adds savoury flavour and helps the eggs turn rich and fuller-tasting.
Asparagus points
Add a tender vegetable element and a fresh, green flavour.

The step that matters

Removing the eggs from the heat as they begin to thicken. Eggs keep setting from residual heat after leaving the pan. Taking them off early, while still soft, keeps them creamy and prevents the proteins from tightening into a hard, dry curd.

Swap the asparagus
