Lemon Candy

Ingredients

Directions

  1. Combine the sugar and water in a saucepan.

  2. Cook over low heat for 30 minutes.

  3. Clear the mixture with a little hot vinegar, removing any scum that rises.

  4. Test the mixture by lifting it with a spoon; it should form threads that snap like glass.

  5. Pour the mixture into a tin pan.

  6. When nearly cool, mark it into narrow strips with a knife.

  7. If desired, stir in chopped nuts before pouring into the pan.
