Canned Berries
Ingredients
Directions
Select berries with unbroken skins to prevent darkening the syrup.
Fill cans compactly with the berries.
Place the cans in a kettle of cold water with a cloth beneath them over even heat.
Heat until sufficiently warm, then pour a syrup made of white sugar dissolved in boiling water over the berries.
Cover the cans tightly to retain heat on the top berries.
To ensure full cans when cold, heat extra berries in the same manner to compensate for shrinkage.
If the fruit floats, pour off excess syrup, fill with hot fruit, and seal as soon as the top fruit is thoroughly scalded.
