Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Bread crumbs
Thicken the milk into a soft, spoonable sauce as they absorb liquid and swell.
Milk
Forms the liquid base that the bread crumbs absorb and the onion flavours.
Butter
Adds richness and a silky mouthfeel to the finished sauce.
Flour
Lightly thickens the butter so it blends smoothly into the sauce.
Onion
Contributes savoury, aromatic flavour as it softens in the milk.

The step that matters

Boil until thin enough to pour. The sauce thickens as the crumbs absorb liquid and as it cools. Boiling for only a few minutes brings it to a pourable consistency, and adding cream or milk afterwards lets the cook adjust it. Overboiling can make it stiff.

Swap the onion

How well each one fits the dish's main ingredients (milk, bread, butter, flour, cream):

  1. Potatofits better
  2. Leekfits better
  3. Arrowrootfits about as well
  4. Onionthe original

Fit is the average pairing score against milk, bread, butter, flour, cream. Candidates are from the same food group and used in at least 100 recipes.
