What each ingredient does

Tea
Provides the flavour and aroma compounds that dissolve into the hot water.
Boiling water
Extracts flavour from the tea leaves and carries it into the cup.

The step that matters

Let the tea infuse for 7 minutes. Steeping too briefly leaves the tea weak, while steeping too long can draw out bitter tannins. Timing controls the balance of flavour and astringency.
