  1. Sprinkle strawberries with sugar, wash well, and rub through a sieve.

  2. To the juice, add ½ pint of cream and make it very sweet.

Freeze and finish

What each ingredient does

Strawberries
Provide the flavour and juice that form the base of the ice cream.
Sugar
Sweetens the strawberry juice and lowers its freezing point for a softer texture.
Cream
Adds richness and fat, giving the ice cream a smooth, creamy mouthfeel.
Whipped cream
Stirred in near set to add airiness and a lighter texture.

The step that matters

Freeze until just beginning to set before stirring in whipped cream. If the base is fully frozen, the whipped cream cannot blend in evenly and the mixture stays icy. Stirring at the first sign of setting keeps ice crystals small and folds in air for a lighter texture.
