Roast Pork

Why it works: Sage and pepper match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 5,388 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓

Ingredients

Directions

The book says “a brisk oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the stuffing

  1. Make an incision in the thick part of the pork to create a pocket for stuffing.

  2. In a bowl, mix the bread crumbs, chopped onion, sage, salt, pepper, and suet until well combined.

  3. Press the stuffing mixture snugly into the incision in the pork.

  4. Sew the edges closed with needle and thread.

Wrap and roast

  1. Grease a sheet of kitchen paper with drippings.

  2. Wrap the loin securely on the sheet, tying it with twine.

  3. Place the wrapped loin in a dry baking pan.

  4. Bake in a preheated oven at 400°F (200°C).

  5. Baste the pork frequently as it cooks.

  6. Allow 20 minutes per pound plus an additional 20 minutes.

Serve

  1. Serve with apple sauce or apple fritters.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Pork loin
Provides the main meat, which is cooked through while the stuffing heats inside it.
Bread crumbs
Absorb moisture and bind the stuffing so it holds together in the pocket.
Suet
Adds fat that keeps the stuffing moist and rich during roasting.
Onion
Adds savory aroma and moisture to the stuffing as it cooks.
Drippings
Fat that coats the wrapping, adding flavor and helping the surface brown.

The step that matters

Baste the pork frequently as it cooks. Regular basting spreads fat and juices over the surface, keeping the meat from drying out and helping the exterior brown evenly.

Swap the onion

How well each one fits the dish's main ingredients (pork, bread, sage, pepper):

  1. Capsicumfits better
  2. Tomatofits better
  3. Potatofits better
  4. Onionthe original

Fit is the average pairing score against pork, bread, sage, pepper. Candidates are from the same food group and used in at least 100 recipes.
