Ingredients

Directions

The book gives no oven temperature. The 300°F (150°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 300°F (150°C).

  2. Butter a pudding dish and line the bottom and sides with slices of stale sponge cake.

Layer and bake

  1. Place a layer of pineapple slices in the dish, then sprinkle with sugar.

  2. Repeat layering with pineapple and sugar until all ingredients are used.

  3. Pour ½ cup of water over the layers.

  4. Cover with slices of cake dipped in cold water.

  5. Cover the dish with a buttered plate and bake slowly for two hours.

What each ingredient does

Stale sponge cake
Forms the soft, absorbent base and top layers that hold the pudding together.
Pineapple
Supplies fruit flavour and moisture that soften the cake as the pudding bakes.
Sugar
Sweetens the pineapple and helps draw out its juices during slow baking.
