Why it works: Parsnip and pepper are a kitchen classic. They rank in the top 9% of all ingredient pairs, and cooks put them together in 1,109 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

Baked Chicken with Parsnips

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Wash, scrape, and quarter the parsnips, then parboil them for 20 minutes.

  2. Prepare the chicken by splitting it open at the back and placing it in a roasting pan, skin side up.

Roast

  1. Lay the parsnips around the chicken, then sprinkle with salt and pepper.

  2. Add 2 tablespoons of butter or 2-3 slices of good pickled pork.

  3. Pour enough water into the pan to prevent burning.

  4. Bake in a 400°F (200°C) oven until the chicken and parsnips are a delicate brown.

Serve

  1. Serve the chicken on a platter, pouring the pan gravy over the parsnips.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Parsnips
Their starch and sugars soften and brown in the oven, adding sweetness and body.
Butter
Adds fat that carries flavour and helps the chicken and parsnips brown evenly.
Young chicken
Provides the main protein, which firms and sets as it cooks through.

The step that matters

Pour enough water into the pan to prevent burning. Water in the pan keeps drippings from scorching before the chicken and parsnips brown. Too little liquid lets fats and sugars burn, making the gravy bitter.

Swap the parsnip

How well each one fits the dish's main ingredients (chicken, pepper, butter):

  1. Capsicumfits better
  2. Potatofits better
  3. Onionfits better
  4. Parsnipthe original

Fit is the average pairing score against chicken, pepper, butter. Candidates are from the same food group and used in at least 100 recipes.
