Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rice
Breaks down during boiling to thicken the soup and give it body.
Milk
Forms the creamy liquid base that carries the rice and celery.
Celery
Provides the main flavour and, once tender, a soft texture for the soup.
Strong white stock
Adds savoury depth to the soup base.
Cream
Adds richness and a smoother, fuller mouthfeel when used in place of milk.

The step that matters

Boil the rice in the milk until it can pass through a sieve. Rice must be cooked long enough for its starch to soften and break down; undercooked grains will not pass through the sieve and leave the soup grainy and thin.

Swap the celery

How well each one fits the dish's main ingredients (rice, milk, pepper, cream):

  1. Nutmegfits about as well
  2. Cinnamonfits about as well
  3. Celerythe original
  4. Cardamomfits about as well

Fit is the average pairing score against rice, milk, pepper, cream. Candidates are from the same food group and used in at least 100 recipes.
