Escaloped Tomatoes

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. Grease a baking dish with butter.

Layer and bake

  1. Layer bread or cracker crumbs in the dish, seasoning with bits of butter.

  2. Add a layer of sliced tomatoes seasoned with pepper, salt, and sugar if desired.

  3. Repeat layers until the dish is full, finishing with crumbs on top.

  4. If using onions, soak them overnight in hot water, then dry, slice, and brown in butter before adding a layer with the tomatoes.

  5. Bake for 45 minutes to 1 hour.

What each ingredient does

Sliced tomatoes
Provide the main moisture and acidic, sweet flavor that forms the dish's sauce as it bakes.
Bread or cracker crumbs
Absorb tomato juices and add structure, giving the layers body and a crisp, browned top.
Butter
Adds fat and richness, helping the crumbs brown and carrying flavor through the layers.
