What each ingredient does

Fresh tomatoes
Provide the main body and juice that softens and thickens into a stewed sauce as they cook.
Butter
Adds fat and richness, carrying flavor and helping the tomatoes brown lightly in the skillet.

The step that matters

Cooking over high heat for 30 minutes while stirring frequently. Tomatoes release a lot of water as they cook. Stirring often keeps them from scorching on the pan bottom while the liquid evaporates and the sauce concentrates.

Swap the tomato

How well each one fits the dish's main ingredients (butter, pepper):

  1. Capsicumfits better
  2. Potatofits better
  3. Carrotfits about as well
  4. Tomatothe original

Fit is the average pairing score against butter, pepper. Candidates are from the same food group and used in at least 100 recipes.
