Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Firm white cabbage
Forms the bulk of the pudding and gives it its body and mild flavour.
Eggs
Bind the chopped cabbage together and set when baked, giving the pudding its structure.
Butter
Adds richness and fat, helping the pudding brown in the oven.
Milk or cream
Adds moisture and softness, keeping the set pudding tender rather than dry.

The step that matters

Cool the cabbage completely before mixing. Hot cabbage would begin to scramble the beaten eggs unevenly and thin the mixture, so the custard-like binding may not set smoothly in the oven.

Swap the cabbage

How well each one fits the dish's main ingredients (egg, butter, milk, pepper):

  1. Capsicumfits better
  2. Potatofits better
  3. Asparagusfits better
  4. Cabbagethe original

Fit is the average pairing score against egg, butter, milk, pepper. Candidates are from the same food group and used in at least 100 recipes.
