Why it works: Potato and rice match in chemistry and in kitchens. They rank in the top 7% of all ingredient pairs, and cooks put them together in 851 recipes. Both carry 2-acetyl-1-pyrroline, which smells popcorn, roasted. The science ↓

Directions
The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.
Heat the gravy in a pan.
Trim the roast beef into shape and cover it closely.
Place it in a 400°F (200°C) oven for 10 minutes or less, depending on size.
Alternatively, cut the beef into slices and heat them in hot gravy until warmed through.
Mix chopped beef with potatoes, bread crumbs, or rice, adding salt and pepper.
Moisten the mixture with water or soup.
In a skillet, heat butter or beef fat until hot.
Add the mixture to the skillet, cover, and steam until heated.
Remove the cover and let it dry out to form a brown crust on the bottom.
For cakes, form the mixture into small cakes, dust with flour, and fry in beef dripping until browned.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
