What each ingredient does

Hard bread
Softened bread forms the body of the omelet and holds the mixture together.
Egg
Egg binds the mixture and sets it into a firm, sliceable form when baked.
Hot water or milk
Moisture softens the bread so it blends evenly with the other ingredients.
Suet or beef fat
Fat for frying adds richness and helps the top brown in the pan.
