What each ingredient does

Butter
Enriches the sauce and adds richness and flavor as it melts into the base.
Flour
Thickens the milk into a smooth sauce by absorbing liquid as it cooks.
Milk
Forms the liquid base of the sauce, which thickens and turns creamy when heated.
Cauliflower
Provides the main vegetable bulk and mild flavor in the creamed dish.
Toasted bread
Gives a crisp, absorbent base that holds the creamed sauce.

The step that matters

Adding the milk gradually while stirring. Adding liquid slowly while stirring keeps the flour dispersed, so the sauce stays smooth instead of forming lumps.
