What each ingredient does

Brussels sprouts
Form the main vegetable; their texture softens and sweetens as they cook through.
Butter
Adds richness and fat that carries flavour and coats the sprouts.

The step that matters

Boil rapidly for 15 to 20 minutes. Sprouts must cook through without turning mushy. Size changes cooking time, so check for tenderness rather than relying only on the clock. Rapid boiling keeps the water temperature high so the cooking stays even.
