Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tomatoes
Provide the main body, moisture and tangy acidity of the sauce.
Flour
Thickens the sauce as its starch swells when heated in the liquid.
Butter
Adds fat for a smoother, richer texture and carries flavour.

The step that matters

Gradually add the hot tomatoes to the flour mixture, stirring continuously.. Flour clumps when hit with too much liquid at once. Adding the hot tomatoes slowly while stirring lets the starch disperse evenly in the butter, so the sauce thickens smooth rather than lumpy.

Swap the tomato

How well each one fits the dish's main ingredients (flour, butter, pepper):

  1. Shallotfits better
  2. Chivefits better
  3. Capsicumfits better
  4. Tomatothe original

Fit is the average pairing score against flour, butter, pepper. Candidates are from the same food group and used in at least 100 recipes.
