Escalloped Corn and Tomatoes

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat the oven to 350°F (175°C).

  2. Line the bottom of a deep baking dish with a layer of cracker crumbs.

  3. Add a layer of corn and a layer of tomatoes.

  4. Season well with coarse sea salt, black pepper, and small pieces of butter.

  5. Repeat the layers of cracker crumbs, corn, and tomatoes until you reach the desired quantity.

  6. Pour enough sweet milk over the layers to cover them well.

  7. Bake until heated through and golden on top.
