What each ingredient does

Sugar
Sweetens the preserves and, as it concentrates, helps draw water out of the fruit so the mixture thickens.
Strawberries
Supply the fruit flavor and the bulk of the preserves.

The step that matters

Boil until the mixture thickens. Boiling evaporates water and concentrates the sugar. Stop too early and the preserves stay runny; cook too long and they turn stiff and sticky as they cool.
