Roast Turkey

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the stuffing

  1. Preheat the oven to 400°F (200°C).

  2. In a bowl, mix the grated bread with salt, pepper, sage, and diced celery.

  3. Drizzle the melted butter over the mixture and stir to combine.

Stuff and truss

  1. Stuff the mixture into the turkey's body cavity without packing it tightly.

  2. Fold back the wings and press the legs close to the body.

  3. Place the turkey in a roasting pan, back side up.

Roast and baste

  1. Roast until browned, then turn the turkey over and baste every 15 minutes.

  2. Add the water used to cook the celery to the pan for basting.

  3. A turkey weighing 8 pounds will cook thoroughly in about 2 hours.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Stale bread
Soaks up butter and juices, giving the stuffing its soft, absorbent body.
Butter
Adds fat and richness, helping the stuffing and turkey skin brown.
Celery
Adds moisture and a mild, fresh vegetable flavor to the stuffing.
Dried sage
Contributes a warm, herbal aroma that defines the stuffing's flavor.

The step that matters

Stuff without packing tightly. Loosely filled stuffing leaves room for heat to reach the center evenly. Packed stuffing heats slowly, so the middle can stay underheated while the outside overcooks.

Swap the celery

How well each one fits the dish's main ingredients (bread, pepper, sage, butter):

  1. Marjoramfits better
  2. Thymefits better
  3. Parsleyfits better
  4. Celerythe original

Fit is the average pairing score against bread, pepper, sage, butter. Candidates are from the same food group and used in at least 100 recipes.
