Chicken Pie

Ingredients

Directions

  1. Cover the chicken with boiling water, season with salt and pepper, and simmer until the meat separates from the bone.

  2. Remove the meat, cut it into small pieces, and break the bones.

  3. Return the bones to the kettle and boil slowly.

  4. In a bowl, rub shortening into flour, then add milk and mix well.

  5. Beat the egg white until stiff, add the yolk, and combine with the flour mixture.

  6. Place the hot chicken meat in a baking dish, adding only a little gravy.

  7. Cover the chicken with the dough mixture.

  8. Strain the liquid from the bones, then make a gravy with flour and butter to serve over the pie.
